What would be a good combo for 200 points.
Their cost makes them tricky to use 2 with a 3rd ship but you have a couple options I have looked at myself.
2 Delta Squadron Pilots and a Scarif Base Pilot leaves 15pts for upgrades. For example, Tactical Officer on the Reaper, Cluster Missiles on the Defender's. You'll get the fun times of coordinating actions on the Defenders before or after they move, being all Initiative 1. However, being all Initiative 1 comes with its own problems. You'll be arc dodged and you don't have much in the way of extra punch when you're not.
Second option, that I'm most interested to try out myself. 2 Onyx Squadron Pilots with Predator and a Saber Squadron Ace. The higher Initiative will give you less ships that move and shoot after you, Predator gives a little extra bite and the Interceptor is a genuine danger if you bring him in late on a flank. Not got round to trying it yet but it could be fun.
Edit. Just occurred to me that one of my other favourite 40pt fillers fits here too. APT Rhymer is an absolute terror if he isn't alpha striked. You can leverage that for a strong advantage.
Possibly the best option you have, of you want 2 in a list, is to go without a 3rd ship. I've flown Rex and Ryad with some small success, as have others. A lot you can do with upgrades but my personal favourite is Advanced Sensors and Outmanoevre on both. It's not easy to fly well but it's also not easy to deal with.
You have loads of options if you only use one. I was really enjoying Vermeil, Echo and an Onyx Squadron Pilot, all with Juke, plus Collision Detector on Echo and a Tac Officer on Vermeil. Might be a better list with Rexler instead though.

You can also try two Deltas and Fel with Predator.
Delta Defender + Delta Defender + Omicron Shuttle w/ Palpatine is great. Search for the many Telling posts TheBitterFig has made about the list and strategies.

Yep, I love Delta/Delta/OGP Palp).
Coordinate is your best friend in this. You're all init 1, so you've got a lot of flexibility in how you move, Defender first or Shuttle first. With an Evade and a Force token to spend, the "safer" looking defender can often Boost, Barrel Roll, or Lock (someone who looks like they'll get a lot of fire should still focus).
I tend to set up with Palp diagonal in one corner, ready to be blocked by Delta 1, and Delta 2 maybe 1/3rd of the board length away, depending on rocks (pick which corner, depending on rocks. Palp can fly towards the middle, get blocked to stall out the game a bit, swing along either side, depending on how your opponent sets up. The two Defenders are close enough to pincer a target, but not so far apart they'll be stranded away from each other. The set-up just has a lot of options (self bumps and 4ks) to slowplay, see which way an opponent is committing to the battlefield before you commit, or can blaze out fast and maybe catch folks off-guard. 5 Straight + Boost is a lot of speed.
I think it's a list which is greater than the sum of it's parts, even if it probably isn't a wicked top-tables one. I haven't lost with it yet, but there's a lot of luck to that. Coordinate and Palp's force, plus the 4 shields and Full Throttle, allow you to take a few more risks than an aces list, and Defenders have such great time-on-target that they have an inevitability to them.
Last time, I tried 2I TIE Punisher, a TIE defender and a Tie advanced worked moderately well, but the ship's initiatives are quite low. Put max upgrades on TIE Punisher : )
