If a leader is the last to die in a unit with multiple minis, and he is the only one in his unit exposed to an enemy unit that decides to attack him, can he die? I believe the rules indicate that minis that are obscured cannot take damage despite how many are rolled, but what if the leader is the only one that can take damage for that unit?

Im guessing you mean the rest of the unit is completely out of LOS?
In that case you'll just need to remove one of your out of line of sight minis from the table and then put the leader mini in that removed mini's place.

Wounds pg58 second bullet point says it takes wounds if only unit in los.

If the Unit leader is the only mini the enemy can "see" when attacking, wounds can only be dealt to that specific mini.
If the Unit leader dies due to a situation like this, one of the remaining minis in the unit becomes the unit leader and replaces their model with the leaders.

This is the correct answer. Kill a mini that is out of LOS and then move the leader into their place. The leader effectively dies and the mini you removed becomes the leader.

Do you have to replace the mini with the leader mini? Cause I feel like doing that can lead to some shenanigans with sniper teams. More so when personnel released.

Yes, you have to replace a mini with the leader's.
With Sniper teams (and strike teams in general), the heavy weapon is the unit leader, so if they die, the non heavy weapon is replaced with the heavy weapon.
With specialists, assuming they work the same as personnel currently, the droids and the coms tech can be replaced by the leader's mini and the officer replaces another mini when killed as they become the unit's leader.

As quoted above, yes, you do have to replace the miniature. Empire players especially in my area have been taking advantage of this rule to keep their sniper teams on the board for at least two turns.
