Even if you run more than 1 copy of a unique support card in your deck, there's never really a reason to carry more than 1 die for those cards is there?

No, but you are required to have both for tournament. I believe the intent was to prevent players from not having enough dice for effects that steal cards with die(like how grievous1 steals weapons). And there are effects that steal unique supports too(stuff like highjack can hit stuff). That said, no one will probably care at your locals and I don't carry the stuff unless it's a big event.
