I’d say either the release of 2.0, especially with clone wars era ships, or the time I used a striker (pure sabaac) with opportunist at range one to one shot an E wing at full health.

Finding out Guri was going to stay at Initiative 5 going in to v2. I expected Initiative 3...
Actually throwing her onto the table in v2 and realizing she now flew like she did in v1, but at far higher initiative and sans Autothrusters, was probably second greatest part.
I've seen this topic floating around for a bit and I finally have my moment courtesy of Wave 2.
We played a team match for our wave party at our local on release night to try out the Wave 2 ships. 3v4 handicapped (400pts) Resistance vs First Order. It came down to the last round before we called time, I was flying Poe and I had him shields down behind a rock bearing away from the action. I had to fly him fairly tentatively as my opponents were gunning for him in particular all game. In his current position and being the last round, my opponents had finally moved their focus off him in order to grab some extra points on other ships before time was up.
By the time I activated they had all turned in on each other and away from Poe, and I revealed a 2 bank. Before moving I BB-8 barrel rolled out from behind the rock, and used my PoeTL charge to grab a focus. The blue move removed the stress ready for my normal action, but I was still out of the fight. I popped my charge on the Black One and 2 hard slammed into range 1 behind a full health Blackout. I switched my weapons disabled for an ion token and grabbed my red dice. I happened to roll all paint. Hit, crit, focus, focus. Blackout rolled a single evade, and took his shield damage and pulled his crit. It was direct hit! I had managed to get half points on this Blackout with my last shot of the game and didn't take any return shots keeping me above my half point threshold.
The rest of my team also managed to get the opposing teams pesky Upsilon down to half points with their last shots of the game. We called time and tallied the points. We had won by 31pts!!! After calculating the cost of the Silencer and the Upsilon we worked out we were 53pts down in the last round. Not only had Poe's fly-boy move paid off, but it was one of the closest things to a movie scene I had been a part of in X-wing. That game was the most fun I've had in second edition, and that particular moment was quite possibly my favourite in X-wing, period.

My favorite moment might just have been yesterday. 2 IG-88 in pursuit of a Star Fortress. One IG-88 is severly damage and the thought of being shot at is scary! I take a gamble and fire my tractor beam, 3 hits vs 0 evades. My IG-88 moves that huge, ill fated ship straight on an asteroid and he earns a console fire! I could not help myself and said in glee: "Wow! Now that rivals what happened in the movie!"
Stop buying x-wing due to 2.0, my wallet is HAPPY with other great sw games...

Finding the very last quadjumper pack left in my LGS and buying it for myself for xmas. First quadjumper I own
Time to put that little tug into my Kavil/Torkil/4-LOM squad and go to war.
Son #1 came to an x-wing event again, which is more than he did since 2.0 was released. He didn't entirely hate it and was actually happy about going.
Son #2 also came to an x-wing event for the first time. He loved Fenn Rau and nearly 200-0'd his brother. He's asked to play twice since, but said one game per day was more than enough.
I doubt competitive x-wing is in our future again, but at least we get to play occasionally now.
Almost selling it all and then having 2.0 save X-Wing for me. Going to a tournament with 3 Punishers and taking dead last for the first time in June (actually my very last games of 1.0), then in October going 4th with 2 Punishers and a Phantom.
But also getting into KeyForge at a side event...
