From what I can find, they pretty much all looked like this canonically:

So for personalisation, I'd say change out the green for other colours and/or add some nose art or aurebesh writing to the side panels.

Here's a "v1.0" rendition I did of one. I've since changed it up but still.

I just paint all mine grey and the pilot to match my other troops. In my case this uniform is white with medium grey pants, gloves, and backpack straps. The AT-RT's themselves all get a few blue accent marks for fun. Since my army is called "The Blue Rangers".

I wanted to make my pilots stand out a bit frint the generic troops.

I haven’t tried it yet but I’ve been wanting to mod an AT-RT with lots of extra bags n flags n stuff. Kinda like the scrap strapped to the side of Reys speeder. I’m inspired by crazy chopper motorcycles like the ones in Easy Rider or something...

A sissy bar on the back, maybe some big exhaust pipes?!

Stuff that a person would need if they were traveling long distance and sorta camping off their bike. Er... AT-RT...
