Will a homing missile that does the one guaranteed point of damage remove a stealth device?
The steal device is only removed when a ships suffers damage while defending. Is the defender "defending" if he is not rolling dice?

A stealth device only gives you the extra evade die while defending but is removed when you first take damage regardless of source.
Specifically for your question, the stealth device is removed from a homing missile and you are defending when you take that damage.
Other cases that are good to know about: stealth device loses its charge when you take damage from an obstacle, bomb, mine, or any other source that inflicts damage.
Stealth device is loses its charge (effectively is removed) when you suffer damage . Doesn't matter if you're defending or not.
There's one or two abilities that deal a damage card and do not count as suffering damage. But homing missile isn't one of them. So, it'll pop the stealth device if you opt for the auto-damage.

i dont get it. whats wrong with the advice (besides replacing "take damage" with "suffer damage")?

In rereading my post I see I was a little sloppy with my language (said remove instead of spend charge type thing) but what did I get wrong?

I think the clearest way to explain this, is to specifically separate the two sentences into two separate effects:
Quinn Jast is the only other one I know of.
