Does AA trigger obstacles 100% like any other dial maneuver?

Rules reference seems like a 'move' will still grant actions even if you go over an asteroid but you still get damage. So can I AA over obstacles and still get an action if my 'maneuver' doesn't go through it?

Yes.

If the Striker using ailerons overlaps an obstacle and the template overlaps the same obstacle in the following move, does the obstacle effect also trigger two times?

From Official Rules:

Q: Do TIE Strikers (and Reapers) skip their perform action step if they overlap an asteroid or another ship with their Aileron’s ability maneuver?

A: No. It is only during the Execute Maneuver step that a ship skips its Perform Action step for overlapping a ship or obstacle.

So, the Aileron Maneuver doesn't count for the purposes of skipping your Perform Action step. There's no indication that you don't OTHERWISE suffer its remaining effects (such as receiving stress, or rolling for damage) on your Aileron move. Subsequently, your actual Maneuver is a separate maneuver, and which can triggers the same obstacle all over again.

Think of it this way: If on one turn, your ship overlaps a rock with its nose, then next turn flies over it completely, do you suffer the asteroid two times? What if your K-Wing with Chopper flies into a debris field... if you use Chopper (crew) to SLAM out of it, do you still get the second stress? The same principle exists in the case of Ailerons: Each move or maneuver, pre- or post-dial flip, can trigger an obstacle.

That is, if you put just your nose half-way into an obstacle, then fly out through it again afterwards? Yeah, it'll trigger twice.
