And Dengar/Snowtrooper/Veers breastplates. It's like they just took the ROTJ army troops and gave them lots of extra gear. Which makes sense for various theaters and missions and stuff.

Indeed it is hard to be a Zero G Trooper: the "running" spacetrooper appears to have been discontinued in the era of small blisters. Poor fellows.

As a costumer I feel compelled to interject that the Mudtrooper armor has so many points of difference from the piece worn by veers and the snowtroopers. It is shorter, rounder, has different buttons, a seam in the right breast and a different yoke, and the shoulder straps and back are far more similar to the shoretrooper.

Still the same basic thing to my eye. If two late 15th century Italian munitions grade export breastplates have different types of straps, varied placement in the seam (or lack thereof), different shaped faulds or lack thereof, they're still both late 15th century Italian export breastplates, and distinct from a German breastplate of the same time, or from any given breastplate of the era before and after it, and will be similar to each other in important ways.
That overall style, with that oval shaped protrusion in the front, is what I'm referring to in the Star Wars armor.
I got two but they are old school Lucas Arts and pre-Disney so they are most likely "Legend" and not in (or purposely contradicted in) their Kid shows.
Noghri Commandos, and Trandoshan Slavers. This would give an Alien/Xenos/Extra-Terrestial auxiliary element to the Imperials who were stretched pretty thin and needed to supplement their ranks. And do their dirty work in the Trandoshan case.

Noghri and in Rebels -ish. Trandoshans were in CW
As a fan of the original Republic Commando, Trando Mercs should be a CIS unit.
A Noghri operative (or a SF unit a bit more of a hybrid between Wookiees and Royal Guards) wouldn't go amiss though.

I was thinking of them as a special forces unit alternative. Now that I think about it I might so some conversions and field them as scout troopers.
So .. maybe I should start a new thread but, should they maybe have a new unit of stormtrooper (figures?) "Stormtroopers II Unit Expansion" if you will; they could have alternative heavy and special weapons as well as a couple of troopers in mud troopers configuration (the extra bulb on the top of their helmets and rain slicks) and a couple of troopers with the backpacks from the sand troopers. This give you the options of switching out figures in the original ST Unit Expansion to give you some better variation in the units... Just a thought.
I'm not adverse to the idea, it's one of the best ways to get new Heavy Weapons for specific units, and you could also for instance, develop new unit leaders (Like a Stormtrooper Sergeant mini) but also that sort of box can lean toward a cash grab, I'd prefer if they diversified a little bit more into the org chart first, then expanded options and poses.
Alternatively, they do an "Imperial Ordnance" kit like the Imperial Specialist kit, which includes a few different Heavy Weapon options for existing units they have. I wonder if they could mechanically balance a Heavy Weapon which could say, be attached to both Storm and Snowtroopers.

I like your idea of the "Imperial Ordinance" box. I want atleast one alternative Sargent and weapons choice. I thought the troopers II box might be a way around doing too many 'like" boxes...
I’d like to have like a box for both snow and storm troopers with weapons that each has, IE and Ion fun for normal stormtroopers, while the snows get a DLT-19.
similarly, some standard stormtroopers for the e-web so you can model them to fit your army.
