Dumb question, but can you use the force tokens from force using crew to modify dice rolls for the ship they're on?

Yes. The force rating of the pilot and any crew is summed and applied to the whole ship. Each ship only ever recovers one force per round though.
How about a docked ship w/ a force user?

No, the docked ship is considered to be in reserve by the rules so the force user doesn't add it's token to the pool.

Yup. For each individual ship, all the force ratings are lumped into one. The force tokens can be spent for any relevant purpose on THAT ship... but only that ship. Consider the following:
Kanan's Force value goes up by two, thanks to Luke and Maul on board. The ship only recovers one Force per round, but it can spend any of its Force tokens, any of four different ways: To modify a die roll, Kanan the enemy's attack dice down, Sense an enemy ship's maneuver, or Luke to spin the turret after movement. Maul can also get force tokens back at the cost of stress.
Ezra , on the other hand, can neither share his force token with the rest of the Ghost, nor can he use their tokens for himself, while docked... for all intents and purposes, he doesn't exist until deployed.
