example i have two pistols each with accurate 1 do i add 2 blue to the check?
dual wielding accurate
If using both, yes.
So holding both, shooting only one, add 1 blue.
Shooting with both, add 2 blues and upgrade difficulty as per two weapon combat.

Darzil is actually incorrect on this.
You only add the Accurate for the primary weapon, as the secondary/off-hand weapon's trait are only applied when you've successfully spent the 2 Advantage from your attack roll to have the secondary weapon hit. Since you've already rolled and resolved your advantages/threats, you wouldn't get to apply Accurate from the second weapon.
Over on the EotE forum there's a stickied thread of dev answers, and I believe this is one of the items listed where a dev confirmed that weapon traits that modify the dice pool or its results, such as Accurate, Inaccurate, and Inferior, don't apply if they're on the secondary weapon.
Edited by Donovan MorningfireYou are right, and I am wrong. Forgot that.
A weapon that granted, say, an advantage, would give that, but only after you'd spent the 2 advantage to hit with the second.

Here's the thing... I'm not sure that's the case.
Going by the normal order of operations in resolving a combat check, you'll have already tallied your total Advantage/Threat before spending any Advantages to activate a hit with the secondary weapon.
So this means that the Superior trait on an off-hand weapon wouldn't give you the extra Advantage, but by the same token a weapon with the Inferior quality wouldn't give you an extra Threat.
I think this is the one I was remembering. " But if your second weapon has a laser sight that gives you an Advantage on a successful attack, then if you're successful and you trigger the second hit, then you gain the additional Advantage as well."
