When Luke resolves his shield dice as melee, can these dice also be resolved the same time as resolving other regular shield dice?

No. You can resolve them as Shields only as a part of resolving shields as an action. Same for melee, has to be part of resolving melee action.

When you resolve with Luke you first pick what it is you are resolving, shields or melee, and then you can resolve any or all dice showing what you picked. Say you choose melee, then Luke's dice are consider melee for the resolving of all those dice. This does mean you can resolve other dice that are not Luke's character dice with melee, including the blue + modifier dice with Luke's dice.

If you are resolving shields, you just resolve dice with shield symbols, no melee or other symbols. You of course don't have to resolve all the dice showing a particular symbol when doing a resolve action, so you can resolve on of Luke's as shields and then on your next action, resolve melee dice including the remaining Luke's.
