I have a quick question (and I'm away from the books at this moment). How does the chase scene work with a group of minions? Let's say 5 tie fighters are pursuing a ship. Do they apply pilot as a group skill (if they initially have it)?

It makes sense that a group may have a better chance to hunt down a single ship, but I wanted to check if the rules allow it. Thank you!

Yes, they use Piloting Space as a group, since it is only as a group that they even have access to skills.

Yeah. Minion groups are essentially just one character. If it helps, think of minion groups as a cheat, a way for the GM to present several low power characters, by using a single stat block so he doesn't have to go crazy tracking a bunch of guys whose primary function is to die 90% of the time.
