Yeah that totally sounds like something to be taken literally.

When it’s backed up by the fact that Jedi mind tricks actually didn’t work on him? Yeah, I’d say that taking the reason he gave as to why at face value is indeed appropriate.

Let’s see, large noses? Check. Immunity to Influence ? Check.

Watto proved that he was immune to Qui Gon’s use of Influence, and he gave a very plausible reason why he was immune, that being a characteristic of his species. Whether you like it or not, Toydarians are canonically immune to Influence . And it was for that very reason that Watto gave Qui Gon for why his mind trick didn’t work.

All I see in canon is mention of a resistance, not immunity.

No, because characters are able to embellish the truth. A character saying something isn't the same as it being canon.

Watto’s statement bore out as true in the fact that he was completely immune to Qui Gon’s attempts to Influence him, not just resistant. Cad Bane was resistant, but Influence still worked on him when multiple Jedi used it on him simultaneously, and even with the single use by one Jedi he had to actively resist it. Watto didn’t even bat an eye. Influence had absolutely no effect on him whatsoever. That is immunity not merely resistance.
