I have a little question concerning greyjoy/neutral combo. I'm not sure if i understand rules correctly.

So i want to play Theon agenda R85 from my hand (and i do so ) on my house card. I have Iron Victory (R81) in game by now. I start the round, and thanks to claim 2 plot, Rorge, and Axe icon from Syrio i issue the military challenge with Varys (R 149), and some other chars too make my opponent use more defenders. So he declares defenders and manages to win thanks to his higher total str. Than i kneel 4 influence and use Iron Victory to kill them.

So now's my question. Can i save Iron victory from being discarded (thanks to Theon agenda), after he kills defenders, with Goodbrother Interceptor, or Smooth sailing, stand Iron Victory thanks to Interceptors ability, kneel Vargo Hoat to stand Goodbrother Interceptor, and repeat the above proces in next challange? (for ex. power challenge) on the very same round (of course if i have requred influence for Iron's ability).

I dont know if i understand Theon's ability correctly, and if Iron Victory can be saved after it kills defenders - text says: kneel influence and discard TO kill defenders, so i'm not sure if its possible to save it before it kills.

Questions of advanced timing aside, your question comes down to this: Discarding Iron Victory is a cost of the kill ability. If you save something from being killed or discarded (made possible in this case by Theon as an Agenda), that card is never actually killed or discarded. If you don't discard Iron Victory, you don't actually pay the cost. If you don't actually pay the cost, you never actually initiated/triggered the effect successfully.

So even if Agenda-Theon enables you to save Iron Victory, doing so would stop you from actually triggering the kill effect. You essentially kneel your 4 influence for nothing.
