E.g. on Sup Ref Luke.

They start open, could you flip closed, spend a force to boost without suffering a hit, then flip open before finally revealing your dial?

Nope, once per opportunity rule covers this.

Like HolySorcerer said, you can only flip the card once in the pre-reveal window. AFAIK Kullbee Sperado is the only pilot who would let you flip S-foils a second time in a turn.
