What skill or force skill would be able to hide a force users ability or at least hide people sensing the force from you?
What force skill?
The Force Talent "Shroud" in Hermit and Shadow allows a character to make themselves undetectable by the Force and make their powers go unnoticed.
I guess in certain circumstances Suppress and Influence could potentially stop someone searching using the Force or make them think they haven't found someone.
I'm not sure it's necessarily very easy to detect someone's strength in the Force. We know Darth Vader could detect his son, but not his daughter's strength in the Force, but I'm not sure what there is otherwise. Qui-Gon needed *redacted* to detect Anakin, with his 'huge potential'.
There's a talent in the Shadow tree that does that called "Shroud." You spend a Destiny Point, and your use of the Force cannot be detected until the end of the encounter.

The "Shroud" Talent is the most obvious, but I think it extends a little beyond your request, since it's more about being totally undetectable via the force, as opposed to just hiding your force powers and abilities. Though this still might be what you're looking for...
For making you merely not appear to have force powers and abilities, but not concerned with actually hiding oneself, it's kinda up to you.
I prefer the path of least resistance in cases like this so I'd probably have it work like concealing gear. You can "just do it" with no check and it will work. The onus is on the opposition to decide to "search" you or not. If the other guy uses an appropriate power or skill on you, then it would be an opposed check (I'd probably do something like Vigilance vs. Discipline, with modifiers applied for things like use of the Sense power, Familiarity of the parties involved, and so on).
If I remember right, the Endless Vigil sourcebook has a section on concealing one's Force usage from the masses, but I don't recall the exact rules and don't have the book handy to check.
My own take is that it'd usually just boil down to the observer making a Perception Perception (maybe Vigilance in some side cases) check opposed by the Force user's Deception, Skulduggery, or Stealth as is most appropriate to the situation, with the caveat that you're not using any blatantly obvious Force effects (such as the Move power). Boost and setback dice added based upon how your PC goes about doing their Force thing, with boost added for stuff that's inherently subtle and setback for stuff that's generally not.

I've got the book in front of me, and while page 71 has a section dealing with The Force in Urban Environments , I'm not finding any special rules for concealing Force usage.
