I was baffled that the A180 Blaster Pistol was not featured in the Dawn of Rebellion book...
Has anyone come up with stats for it? If not, any ideas on what its stats might be...?

I believe something like this is going to be in Cyphers and Masks (the AoR Spy book). It's due to be released next Thursday.

I picked up the Cyphers and Masks book at GenCon. There's no A180 pistol listed. There is an A280-CFE Convertible Heavy Blaster Pistol listed. Stats are:
Skill - Ranged (Light), Damage - 8, Crit - 3, Range - Medium, Enc - 3, HP - 1, Price - (R) 1,700, Rarity - 7, Special - Stun Setting
A character can spend a maneuver switch the weapon to Rifle mode. With the rifle accessories attached, the weapon's range becomes long, gains both the Accurate 1 and Pierce 1 item qualities and is fired using the Ranged (Heavy) skill of the character.
Is there anything similar to Cassian’s blaster?
wookiepedia lists it as a A280-CFE blaster.

I think the A180 blaster has been reserved for the sequel era book as it was used in sniper mode by the Resistance forces.

Cassian probably has a rank in the Sniper Shot talent to get the extreme range shot with his weapon.
