
Why are all the ships painted with all those little dark grey squares all over them. The canonical ones obviously don't have them, and they don't make the ship look particularly flattering. So is there any reason why they are painted like that?

Because the empire is boring and without cinematic lighting the abysmal design skills of the imperial ship builders would be on full display without even the slightest hint at excitement.

Maybe the different colors represent panels replaced after seeing action.
Yeah I never got it. FFG is trying break the gray up but they did it poorly. I've painted over them and then added more subtle smaller panel changes to create a sense of depth. They should of had slight color changes and much much smaller panels.

My guess is that it is just a very uninspired try to make it look less bland.
But be glad this is how WizKids does the "Pre-Paint" of star ships:
