Not sure how many people here are familiar with SF Debris but he has done 3 Star Wars documentaries so far that I thought people might find interesting, especially the last one detailing the production on the Prequels.

Hero's Journey: Tells the inspiration for Star Wars and the production on ANH/Star Wars.

Shadow's Journey: Tells the productions behind ESB and ROTJ as well as some of the stuff that Lucas was going through at the time.

Hermit's Journey: Tells the production behind the prequels, likely the one I found the most interesting.
