This is what I think too, but remember the Rulebook says the opposite. The Rulebook is "character friendly".

If you roll 6+6+6 at Mines/Crypt, getting to reroll all 3 dice with 1 Fate would give a clear shot at passing. But rerolling only 1 die, you're still looking at a minimum result of 13.

Rerolling everything gives you the same chances as the previous roll, which is faithful to both Fate Rule spirit and Talisman spirit. Re-rolling only one die gives you a completely different chance of succeeding, depending on the first result. And in most situations gives you control .
Rolling 6+6+6 is a very extreme situation. It's quite more probable that you get something like 3+5+2. Supposing you have Str(or Cft) 9, if you re-roll the 5 you have 66,6 % of passing the challenge. If you have to re-roll everything, all starts from scratch and you still have a chance under 50% (considering that a 3 dice roll is a 10,5 by average).
With two dice, rerolling only one die is a lot more significant. You said many times that Fate totally nerfed Dice with Death; sure you're right, that's why I don't apply the RAW. If you roll 5+1 and Death rolls a 7 (in any combination), which are both likely results, if you re-roll the 1 there are 4 chances out of 6 that you pass the test. If you re-roll everything, you're below 50% once again.
that is also why i am starting to think that if you use fate to re roll, its a complete re roll, not just one dice but all the dice you have rolled for your self

That's a very convincing arguement. You're right about that, you shouldn't have any control and it could be totally worse if you reroll multiple die, much worse...
I was mulling this over while cooking supper, and maybe a good compromise might be to use a Fate token for each die. If you don't have enough tokens, then you can't reroll, but you if you have enough then go for it. The instances where you have to roll 2 or 3 dice are usually for higher stakes as well.
Why I came to this is with the Mines you have to roll 3 dice, but would 1 Fate token be used to roll all 3? It seems to keep the stakes hgher if you want to pay for each reroll. I think you have to still accept the outcome, there's been a couple of intances where I've rerolled a Toad, and got another 1, you were just meant to be a Toad. I still like your arguement for rerolling all of them, but will stick with the basic rule and might add this twist for 1 Fate for each die.
i like it the way it is, especially w/ a high fate character at the temple. i like to keep a 5 or 6, and reroll the low die when i have plenty of spells to gain str,crt, life or fate. i hate getting a talisman there though

I think the rules are pretty clear that you may pay one fate to re roll one die that was just rolled.
In the case of multiple dice, one fate to re roll one of them.
(It even gives the Dice with death space as an example and you may only re roll one of the dice there)
You can change those rules into house rules though, and re roll what ever you like.
If you find it more fun that way then play it........

This right here is a great point. Sometimes rerolling only one is more helpful than a full reroll, sometimes it isn't.
The rule is crystal clear and there's really no reason to muck with it, unless as Fussypants says you find it more fun that way.
In the end, the game is about fun and if everyone agrees to play with a House rule then so be it. Any disagreement should result in the rulebook being followed for clarity's sake.
