(For some reason, I thought that he was also a Grand Master/Master of the Jedi Order, but I can't find anything to support that from a quick search through Wookieepedia. Apparently that was just my head canon.)

Your post made me think of the idea that the Jedi are not a cross-section but perhaps a representative body, so it might not reflect the ratios of the Galaxy but it may show its diversity.

I'll add a belated vote to the Cantina feel. To me, NPCs are a cast of character actors; I pick ones that fit the part or setting, taking care not to show the same species too often in a given period of time as players tend to conflate them. So to the extent they serve my game, aliens aren't easily captured by a census.

I like to do that too, the different species add a certain feel based on the spread of what is there. If I want to describe a really rough place I put Trandoshans and other carnivorous bad actors in there. If I want a typical cosmopolitan mix it will be Ithorians, Gran, and such.

Yes, and the Wookiees represented the Trandoshans as well since they shared the same star system. Gran from Malastare represented the Dugs since the Gran had managed to colonise and buy the planet out from under the Dugs and the Dugs claim to their own planet wasn't recognized by the Republic.
