Canonically, and in Legends, they could spend centuries, even millennia in Carbonite hybernation. Carbon Freezing was used to place colonists in hybernation during the the early years of galactic exploration before the advent of hyperdrive technology.

In The Clone Wars, Anakin and some Clone Troopers were frozen in carbonite to infiltrate a Seperatist base, then had no ill effects immediatly after thawing.

That would suggest (Canonically anyway), that the longer you are in, the greater the effects you suffer. (Han was in for much longer, and lost his sight for a good time as a result).

Now, that might be down to the process used, as Han was frozen in a makeshift method, but otherwise, you would be looking at Legends for any more details.

I agree with @awayputurwpn: whatever fits your plot.

You forgot “...sexual side effects in men women. Talk to your GM if you’re pregnant or think you may become pregnant before being frozen in carbonate. People frozen in carbonate should not use MAO inhibitors. If you’re wondering if frozen carbonate is right for you, talk to your GM today.”

Don’t forget that carbonite is a known to the state of California to be a carcinogen!

Also, you can’t have just Carbonate.

Carbonate is an ion with -2 charge, so if you ever somehow compiled pure Carbonate ions, they would instantly repel each other before something oxidizes them.
