I noticed that in the core rulebook there was no planet stats for places like Endor or Hoth. There are some planets I've never even heard of. If anyone had any remotely close stats for some of the main planets I would be very grateful.

Hoth’s a giant chunk of ice. That’s really the main thing. Strongholds of the Empire has a really short entry for it, but also a detailed description of Echo Base. In terms of stats, whatever you find on Wookieepedia et al should cover all there is to know. Same for Endor really, other than having a temperate climate rather than a frozen one. Just google the names of the planets you’re interested in, if there’s info available you’ll find as much as you would in a book.
True enough, ronin. But, sometimes it's convenient to have the planet sheets. (Plus, I find 'em fun to make.) So....
Hoth, meanwhile, has a planet sheet in the AoR CRB.

Cute, but since EotE is set around the time of the Battle of Yavin, then the second Deathstar hasn't happened

Key word being "around." ? The first planet sheet we got for Alderaan showed space debris, so that's at least some time after.

Alderaan was destroyed before the battle of Yavin. The battle was at the end of the movie, Alderaan was near the middle.
The key word is still "around." We've had references in game materials to Echo Base, and other touchstones decidedly not "around" the Battle of Yavin. The "default" setting for the games is the original trilogy, primarily between Yavin & Hoth. With a construction project the size of the second Death Star, I'd say no harm/no foul to referencing some of that construction infrastructure.

Actually I’d say Alderaan was all over the place....
Also moons dont suddenly appear. For example the ewok movies i believe happen pre return of the jedi?

It's actually set a little after the Battle of Yavin - by the book's opening crawl, the destruction of the Death Star is pretty much what enabled the game's setting, with the battle station's end both jostling the empire's control of the galaxy, but also pushing it into actual war.

Current info on Wookipedia has them at the date listed on the planet sheet. (It’s been years since I’ve watched them - although I’ve got the dvd - but I recall their timeline position was pretty nebulous, but putting them after RotJ fixes the inconsistency of Wicket developing a decent Basic vocabulary by the time Cindel left.)

And we also get some info on Echo Base. Nothing preventing mention of construction infrastructure on Endor.
But, we’ve got multiple planet pages for several worlds with different emphasis determined by the books they’re in. We’ve now even got “intact” and “destroyed” Alderaan pages. So, look at my Endor sheet that way if it helps. ?
