Believe me, I've studied every photo I can of both the original effects model and studio scale reproductions. This is a pure gunship, and those secondary sources (read: everything NOT the film. But ESPECIALLY the EGVV which is poorly-researched trash) are full of it.
If it were me, I'd eliminate the primary weapon and torpedo launchers, give the B-wing three cannon slots, and allow it to equip autoblasters, ion cannon, and heavy laser cannon for free.
If you look at an F-22 in flight at any time when it isn't firing its weapons, you won't see an opening for any weapons. They have doors that automatically open to fire weaponry and close immediately afterwards. Granted, that's for stealth purposes, but one could easily justify it on a B-Wing as armoring up the torpedo launchers to prevent an enemy shot from setting off the torpedoes before they can be fired, since they were designed to close in on capital ships, after all.
Really, all the weapon systems on a B-Wing are retcon, since they really don't get much visible time on camera in RotJ.So if we need to retcon a way for it to have proton torpedoes, big deal

Just to clarify, I'm not saying that the B-Wing shouldn't have torpedoes, I'm saying the Striker should have bombs.
I mean... Why not make the ships more accurate, if you have the chance? Strikers weren't featured prominently, like most ships in the game. We haven't seen many features on screen that ships supposedly have.
I just think the people claiming the Striker shouldn't have bombs are somehow salty, or maximum level purists... but in that case, this game isn't for them.
The U-wing cockpit incongruence is of particular irritation to me. Not even R1 gets it right in the first and only movie it appears in. I assume it had something to do with design changes occurring while production was already under way.

Probably. Especially with all the re-shoots. Maybe they needed it to do something in later scenes, so they changed it afterwards. You wouldn't believe how many concessions like that are made with movies. Changing the set, the wardrobe, props, just to accommodate something that came up later.
Right. If they wanted to fix it, I guess we could have two versions of the U-wing. One with full glass floor cockpit and one with front landing ramp. Alternatively, they could say the bottom half of the pit was like a display of some sort that had a video display to give the pilot some sense of what the LZ looked like.

See that's where you're wrong. What you call the Tie punisher is actually the Punisher's tie from that one rare MCU/Star Wars crossover comic from 5 years ago. And as the punisher is basically rambo, that many gunner slots, and accompanying guns are totes legit.

They retconned the Slave one to have EVERY commonly known weapon system in the WEG SWRPG, then brought most of them to canon in AotC with bombs and auto blasters appearing where no obvious weapon ports were visible before. It’s not a stretch to imagine hidden HLC, Ion cannon and torp and missile tubes on the Firespray, so why not on the B-wing or TIE Striket, or TIE Bomber/Punisher.

In the flight sims, the B-wing launches torpedoes from the area between the two front lights.
In that picture you can see something there that reminds a bit to the warhead magazines on the Gunboat.
Edit: Final Rebel cutscene in X-Wing versus TIE Fighter: Balance of Power. Those are heavy rockets.
Keep in mind that the movie models don't necessarily take into account the practicality of its design.

When it comes to the TIE Striker - at this point, it's going to need something to distinguish it from the Interceptor (which from what we've seen so far, is the superior ship). With the TIE Bomber getting a bomb-related ability, it wouldn't be stealing the thunder from it, so adding bombs to the Striker would make it a bit more unique.
It was confirmed in the Unboxing that the TIE striker can indeed equip a bomb/device.
I will have to fly “Duchess” with a bomb, so I can drop it say I'm spitting my load then yell “Phrasing!”

TBF laser cannons are just really powerful lights.
On the note of the question in the OP, the Striker is reportedly getting a bomb slot, according to the voiceover on the unboxing stream.
