Say its my turn to move and I wish to drop a bomb, what happens if a ship is already occupying the space the bomb would be dropped.
Does this mean I can't drop it?

Placement of the ship would be marked, remove the ship, place the bomb, place the ship back down.

Adding to what's above...
You can definitely place a bomb or mine so it overlaps another ship; as stated above, you mark the ship(s) that would be in the way, remove them, place the bomb token, then replace the ships. That's not always necessary, though, especially in casual games: sometimes, it's easiest to just hold the bomb token in the approximate place and tell your opponent, "This will clearly trigger on ship X," them remove the bomb without ever FORMALLY placing it.
As for the bomb EXPLODING... well, that would depend on the bomb:
There are also some situations (such as both versions of Captain Nym) that can allow you to prevent a bomb from detonating, as well. That way, given the correct circumstances, you could conceivably overlap a friendly ship with a bomb token, without having that bomb/mine detonate. These situations are fairly rare, though.
