If Dengar gets destroyed, does he still get to use his pilot ability and shoot back before his ship leaves the battlefield?

This is the same timing used by other abilities that perform an additional attack (such as Gunner). Yes he does. Per the timing chart in the FAQ, his ability takes place at step 9, he's not removed until step 10.
