But so far I've got a fondness for my Scoundrel/FS Emergent/Shien Expert build.
Sage+Niman+whatever else, probably Seer (the other one that gives you 2 FR rating boosts in one tree). I personally don't find saber stuff all that interesting, and consider it the least fun aspect of Force users, and prefer actually using the Force. So having the 3 specs that would give me a large amount of FR boosts, as well as the defensive benefits of a lightsaber tree, and I'm happy.

Really? You can't have a favorite now, based on the currently available material? All judgement and personal enjoyment/preference is suspended indefinitely until every...single...tidbit of a large franchise has been codified and published, you have no opinion that amounts to "I really like this combination"?

Well I can't have a favorite combination until I've tried them all! Of the currently released material I still haven't tried every single spec and haven't started as every single class.

Ascetic/Sage/Niman Disciple. ALL of the Force, but still with a lightsaber.
3 spec Jedi or 3 spec force user?
Aggressor, Warden and Sentry.
Ascetic, Niman, Seer. Lots of force tricks and high Force rating. Good LS bonus.
Favorite defensive/Force-focused combo:
Niman Disciple + Protector + (either Sage for max Force power, or Arbiter for some extra lightsaber abilities + FR, or Soresu Defender for Supreme Parry 10).
Favorite offensive lightsaber attack combo:
Ataru Striker + (Sage or Hermit) + Niman Disciple -- with Parry 8, Reflect 7, FR 4 and Saber Swarm, you will carve up the enemy like a hot knife through butter while protecting yourself very well

I find that whether it's fun or not depends mostly on how good a job the player and GM can both do in coming up with cool results of advantage and triumph. If either party falls short, lightsaber fights can be quite dull. If both are on the ball, it can be spectacular and cinematic.

I don't mean regarding the mechanics of the lightsaber in a gaming system, I'm talking about in the Star Wars franchise in general. The lightsaber is iconic, sure, it's got a very atavistic place in our culture and the subconscious of several generations of fans, absolutely. It's still just a sword, when compared to The Force itself. For me, the more enjoyable, and interesting aspect of playing a Force user, is
using the Force
, not swinging around a glowstick of death.
I had more emotional reactions to the times when characters in the films would actually tap into the Force, to do something incredible, than how good their stunt double was at swinging a sword.
So for me, I find being able to lift starships with a wave of my hand, linking my mind to potentially dozens (hundreds from some of the Legacy stuff) of people to coordinate a massive military attack, seeing the future, communicating with people long distance, shutting down Force powers of people trying to attack me, and the plethora of other things people can pull off with using the Force, far more enjoyable and engaging than melee combat.
Basically, I find being a Space Wizard more enjoyable than being a Space Knight with a Laser Sword, who mostly just swings it around, which is what we mostly see them do in the films. As far as on-screen time for sword fighting, versus using Force powers, it's heavily leaning towards the "lets have them swing sticks around" than it is towards "let's have them act like their doing stuff with their hands and put in the special effects later".

It all depends on your group and what each player wants. I feel bad in one of the FAD games I'm in, half the group wants to fight often where me and one other look for other solutions. The peaceful players are more vocal so we have only had 1 fight in 8 sessions, which im sure is bothering part of the other part of the group. So I suggested to our storyteller to try and split the party so the other half can get their combat they want and keep the peaceful players from breaking their character to help let the other enjoy the game more.
Hermit-Sentry-Shien Expert, because everyone should ride their animal companion into battle throwing a Lightspear!
I must admit a high Willpower Arbiter-Aggressor-Niman Disciple is a close second.

Niman disciple does not have to be first... I was thinking of putting together a green nikto bounty hunter:martial artist/padawan survivor/Niman-disciple with a repulsor fist and fully modded (not difficult because of padawan survivor's improved secrets of the jedi) dragite crystal build with the move, enhance (brawl), and sense (full defense upgrade) just imagine unmatched devastation combo
Draw closer if you miss force assault, if you hit concussive 2 to stagger them for 2 rounds, then punch them with enhance brawl pretty much guaranteed to hit and crit (need 1 advantage) use improved precision strike to choose the extra attack with the same dice pool, so you use the repulsor fist and 2 advantage counting force pips is "almost" guaranteed to trigger concussive which means they now aren't going to be able to attack you for 3 whole rounds, it's unclear to me if you can now move hurl for your 3rd unmatched devastation attack but I think it's legit, then it almost doesn't matter at this point if you hit when you try to shoot them with a pistol. Then for the next 3+ rounds you walk up to them all casual and keep increasing the stun lock on them with the dragite lightsaber.
But if you were to say 2 spec Jedi then hands down niman-disciple and sentry in either order.
If you've listed 3 specs but no explanation, please flesh out your reasoning for me!
If you want to include skill with a lightsaber while not giving up too much in terms of FR, it’s difficult not to go with Niman or Sentry. Kind of bugs me when looking at the other LS specs, I don’t think lightsaber training makes up for losing out on Force power reliability (and to an extent, access) given how effective the Force powers can be. On the flip side of that coin specs that allow two FR increases are appealing for Force use masters, but those talent trees feel (to me at least) a bit more specific towards character concept than the aforementioned two when wanting some cool lightsaber moves.
Regardless, I’m all about the Sentinel. Shadow-Sentry, normally with Shien Expert for the third but I might go Padawan Survivor in the future.

Why shouldn't focusing on being good at lightsaber training mean you aren't as powerful with the Force? We see it repeated all the time in the films and tv shows. The more martially oriented jedi really struggle with trying to do actual Force stuff. Because they've been too busy swinging around glow sticks. They have to go on a whole vision quest and everything to actually tap into the stronger aspects of Force ability.
It's like saying it bugs you that spending years learning how to fence means you haven't been studying on how to use magic, because you've been spending all your time fencing. But somehow learning to fence should let you be better at magic? (aka, there should be a FR boost in the saber trees).
I think it makes perfect sense that the saber trees don't improve your FR rating, except for the least offensive tree of all of them. Lightsabers are insanely deadly in this system. Having multiple saber trees that lets you ginsu blender everyone in Engaged range, AND also give you more Force pips to trigger powers (assuming you bought any upgrades), is very unbalancing.

What martially inclined Jedi struggle with trying to do Force stuff? At worst I see Jedi with tunnel vision, who should try harder to find solutions that don’t involve lighting up. At best I see Dooku and Yoda squaring off.
The real issue here is that Force wizardry, if used properly, would likely break any plausible scenario Lucas could come up with. The Jedi don’t do what they could, even within the limits they impose on themselves. The Sith for sure don’t do what they could, even accounting for secrecy. What they do instead is preferably flashy, to make for exciting action sequences.
