So I'm attending GenCon for the firs time this year, and was looking to see if there was going to be an X-Wing tournament since FFG hosted one last year. I'm not seeing anything official from FFG in regards to a tournament. Does anyone know if there is going to be a tournament (FFG or otherwise) run and if so where can I find the details?

FFG is one of the sponsors for GenCon 2018 - they will have events. Event registration isn't for a while yet, so if you've seen anything listed for events it would be incomplete at this time. Typically we see the North American championship from FFG, plus a couple side events. There is also numerous third party delivered X-Wing choices, so you could conceivably play X-Wing all weekend if that was your choice.
