I was considering playing as a wookiee in an upcoming game/campaign. However, I am concerned about their extremely low strain threshold. Other then trying to push willpower stat or picking a talent tree with Grit and Resolve is there anything I can do to improve this? I really don't want to be incapacitated with ease. Advice?

There is an armour attachment called bio feedback system. It increases your strain by 4 when you have the armour equipped. It does cost 3300 credits however. Page 200 F&D core book, 2hps

Ahem
Two words: Wookiee Doctor.
And I know you said aside from picking a talent tree with Resolve, but come on...Pressure Point has Wruushi style written all over it!
Yay! It’s fixed!
Look for talents that reduces the number of manoeuvres you need to take Eg Jump Up, Quick Draw, Swift.
Try to maximise your Advantage rolled by adding boost dice and being real dam good at your shtick (4 Ability dice). Spend those Advantage on an extra manoeuvre or recovering Strain.
Use a Ranged weapon in combat even if you’re main focus isn’t combat, if you don’t have to get to the enemy you don’t use as much Strain. A blaster pistol from medium range saves you moving.
This one is a very cheestastic option, if you can afford it then get armour with a point of Defense, it will discourage you from wasting a manoeuvre taking cover... like I said it’s cheesy.
Look for Talents that allow you to spend a Destiny Point to recover Strain equal to a characteristic, only if it’s a characteristic with 3 or more though.
Get a buddy who has Inspiring Rhetoric or the Heal Force Power.
8+Will is low, but not the end of the world. Strain is complex, in that there are lots of ways a character can be affected by it. Most have workarounds or fixes. @SithArissa mentioned the biofeedback system, which is a pretty good catchall solution but expensive when starting out. Other solutions will only offer a partial fix, but will also be easier to attain (though they might feel restricting, depending on your character concept). Soak reduces Strain in some specific cases (being stunned for instance): Wookiees get a high base Soak, and gear will increase that further. Get gear that allows you to ignore adverse environmental effects. Don’t take Talents that require you to suffer Strain to activate - Wookiees have a high Wound threshold, so definitely don’t use ones that trade Wounds for Strain. Don’t use other mechanics that trade Strain for something (like suffering 2 Strain to gain an additional maneuver) either, or at least not too often. Invest in Discipline or Cool, so you recover from Strain more effectively.
Plenty of characters trade Strain for something on a regular basis. Sure, they’ll have a higher threshold and they will probably also have done some of the things above to improve their Strain economy, but it still does suggest that if you are a bit more conservative with your Strain you should be ok even with that low threshold.
Edit to hopefully make a succinct point: most of the examples in the books that show how you suffer Strain are not meant to incapacitate you, at least not quickly (getting stunned being the main exception and Wookiees are hard to stun). They are meant, in my experience, to limit your resources and options during encounters. Characters trading double-digit Strain numbers in a single encounter have it too easy. Siphoning off a bit of Strain first helps. For Wookiees, that just means they get to trade even less Strain.
Edited by nameless roninThere is also the Energy Dispersion System. Another Armour attachment that counts your soak as 2 higher when taking strain damage. 201 F&D core book, 500 credits, 1hps. Doesn't help when you are paying strain but is a much cheaper option to avoid taking it from others.
