Of all the pilots that have an important on-screen role, which is the best in X-Wing? I'm thinking Poe, Vader, or Quickdraw (we all know it was QD who fired missiles at the Raddus's bridge)

Wedge, in about three months.
I dunno if he's the best, but I'm pleasantly pleased with the resurgence of Wedge Antilles. Vader came back after ATC, which was great. And it's nice to see Wedge in such a light these days, too.
Oh come on people, there's only one answer to this. He single-handed warped the meta from day one until last November.

He survived more battles than other "secondary" characters, and only wasn't in the attack on Starkiller Base because he got bored of flying and retired, not something most rebel pilots ever lived long enough to do.

Pre Nerf it might've been Biggs, but only that mustache is really iconic.
Vader is very iconic, but is merely pilot that may see across the table as opposed to a super meta pilot.
Rey is picking up in popularity because of successful she is against Ghosts, maybe enough to overtake Poe.
Wedge is also very iconic, but much like Vader, just kind of exists in the meta and isn't prevalent enough.

TIE Advanced: Darth Vader
TIE Silencer: Kylo Ren
Define on screen? Do they have to be shown, or just their ship, or both? (We see Dengar but no ship, we also see the Outrider but no Dash.) Best in X-Wing with the ship they are in, or just all around pilot ability?
Vader is most likely the best pilot in the game if he was in a different ship. Could you imagine if he was in a TIE Silencer? Any given ship Vader would be the best pilot on that ship with a few specialty exceptions.
Pilot plus ship, I favor Rey.

The unknown TIE academy pilots exploding everywhere; cheap, expendable, and available in huge nummers. This is what makes them the best.
And admit it that close up of a TIE pilot is iconic.... ;-)

Darth Vader, Lord of the Sith.
At West End Games, when we were making skills for the main characters we went through A New Hope’s Movie, script, screen play, novel, and even documentaries from 1977 to 1978.
Further we used The Empire Strikes Back to get a better handle of Han.
In the end we settled while both were among the finest pilots in The Galaxy, Han edged out Darth Vader, but just marginally.
And the Sith Lord has The Force.
