Has anyone statted out Clone Wars era tech (gear, ships, etc)for the time period of these games? I tried a few searches but mostly only got X-Wing miniature game related stuff.
Seems like it would be a cool resource, to me. Surely some of this tech is still in service, or could be made to be easily enough.

If you dig through what's been published you'll find quite a bit. Battledroids, V-19 Torrents, Destroyer droids, AT-TEs, LAATs...
In other cases you don't need to rewrite the book. A blaster rifle is a blaster rifle, laminate Armor is laminate Armor...
In the end there's probably not a heck of a lot that needs to be done...
Alrighty, let's see... I'm think going to start with posting the ground forces.
B1 Battle Droids appear in the Edge of the Empire Core Rulebook as "Antiquated Battle Droids." Droideka and BX Commando Droids appear in Chronicles of the Gatekeeper. IG-100 MagnaGuards appear in the Force and Destiny Core Rulebook. The Tactical Droid shows up in Lead By Example.
That just leaves B2 Super Battle Droids and B2-HA Super Battle Droids for the primary ground forces of the Separatist armies. I built my B2 Super Battle Droids as rather imposing minions (watch those wrist rockets!), and the B2-HA Super Battle Droids are somewhat in-line with a weaker Dark Trooper in stats and equipment.

I'm still working on stats for the Hailfire droid tank, AAT, OG-9 Homing Spider Droid, DSD1 Dwarf Spider Droid, and Crab Droid for the Separatist ground forces. I'll post them to this thread once I have something I'm satisfied with for each of them. For the Republic, we actually already have stats of the LAAT, AT-RT and AT-TE, but I do want to come up with stats for the Juggernaut. Other than that, there's not a whole lot needed for the Republic's ground forces. As Ghostofman pointed out, laminate armor is laminate armor. A blaster rifle is a blaster rifle. If anything, I might stat out some Minions and Rivals for various types of Clone Trooper, just in case you felt like fighting a squadron of clones or something.
Now for some of the space vehicles, I've been finding a few from various books, and making some others as best I could.
Both the Z-95 and the Y-Wing were commonly used in the Clone Wars, and can be used as-is out of the books. Likewise, the Delta-7 from the Force and Destiny CBR, and the V-Wing from Stay On Target both work fine right out of the book. The V-19 from Disciples of Harmony, however, needed some work (since the DoH version is heavily modified and unarmed).

The Integrated Droid Brain is a simple Minion with Br 1, Ag 2, In 1, Cu 1, Wi 1, Pr 1, with the group skills of Piloting (Space) and Gunnery.
For larger ships, we only currently have the Munificent-class Frigate in Lead by Example and Consular-class Cruiser in the Age of Rebellion CBR, but it shouldn't be too hard to come up with some stats for things like a Lucrehulk and a Venator-class Star Destroyer.
