One of the people in my X-Wing gaming group has never seen any Star Wars movies. What do I do?
I Have A Problem
Ask them if they want to? If yes lend them copies? If no move on with life?

The big problem is that he can't participate in our Star Wars discussions and he doesn't know who any of the unique crew/pilots are (besides their abilities).
Have them watch Spaceballs first.

As if he want to and loan him copies of the movies if you have them. If he doesn't then WHO CARES! If he likes the game for the game then that is WONDERFUL news and also means he isn't being influenced by outside sources when it comes to looking at ships.
As for not knowing anything about the games many unique pilots I'm afraid to burst your bubble here but watching the movies really isn't going to help that very much. Sure we hear the names of a few of the pilots in the movies but most of them are essentially "extra with a speaking role" or even just "Pilot extra #1" and that's all we need to know about them. Missing out on the bigger Star Wars discussion still may not be helped by watching the movies depending on what your discussion includes.

Don't watch r1 before ANH.
It makes everyone come off as more incompetent and the timing is just off.
Easy enough to ignore if both are watched with some time apart but R1->ANH being viewing order for someone who isnt a fan will elicit reactions of "wow this is dumb"

Isn’t the machete order IV, II, III, V, VI, VII, VIII? I think R1 serves as a good bookend after you’ve gotten through all that.
Personally I’d really skip II and III.
You must watch them in the order of their release, or you're missing out on the feel of what order they came in, how the universe has changed throughout time, etc. This was how I was introduced to Star Wars (granted, before Clone Wars was a thing), and that was definitely the best way to catch up. So the order to watch the movies in is:
IV, V, VI, I, II, III, Clone Wars movie, VII, R1, VIII.
I'd still suggest skipping the Christmas Special though...
Hopefully in a month or so, they'll be ready to go see the Solo movie with you!
Show him all the scenes of his favorite ships. K-wings, Jumpmasters, Decimators, you know, all the really good ones
