The only ships I don't have are Wookiee gunships and TLJ bombers (because I don't like either).
I want some fun builds to try over the next few weeks. No need to be top tier but I want to have a chance of winning!

You get to bring 4 X-wings to the table and formation fly them. Jess is strong with rerolls from buddies. Tarn and Hobbie are paired with Astromechs that interact with their pilot abilities, and are really a lot of fun. Rookie just rounds out the list.

I pair with Rey (Finn, Kanan Jarrus, HoR title, Expertise, Countermeasures), but if it's your style, a Dash can fit: Push the Limit, Kanan Jarrus, Heavy Laser Cannon, Outrider, Engine Upgrade. There'd be 3 points left for a Missile or Torpedo on someone (Seismic Torpedo sounds nice, actually...).
Be sure to play with Debris instead of Asteroids, since you really don't want to accidentally strand Cassian on a rock. Giving him extra stress isn't ideal, but you've got a lot of tools to work with it.
Anyhow, Cassian will use Advanced Sensors to Focus or TL into Expert Handling, then execute a green move and add two more focus tokens. If you use a White move and Kanan with Cassian, you'll clear stress but not get extra focus tokens. I think it's probably important to have Kanan as an option, however, for the flexibility. It's also worth being willing to dial in a red stall, and just focus before it. As strong as the combo can be, it's worth not using it sometimes.
I guess the Rey/Dash isn't super fun or creative, but you're also flying a U-Wing, so I think it balances out.
I ran this at a casual tourney and had some great fun with it. The ability to k-turn/1 hard turn with the b-wings while having focus from advanced sensors and reroll from linked battery makes them really fun and hit hard.

I've been having fun using Ashoka's TIE with the EMP, and 2 K-Wings.
I think if you are looking for fun lists, I tend to find 3-4 ship ones are usually more interesting unless the 2 ship list has some unusual combinations or upgrades. Here are some of my favourites:

A bit more of a challenge to fly but lots of ways of inflicting auto-damage on the enemy balances it out. You can either take Sabine to make sure you can dodge your own bombs, or Rex (or Zeb) with Intelligence Agent to help you predict the best time to drop a bomb. R5 Astromech is there on all 3 Y-Wings so you don't have to worry so much about catching your own ships in the blast radius, allowing you to be a bit more aggressive with the bomb drops.

Three T-70's are amazingly fun to fly and @Estarriol 's list above is a good one. This is a slightly different variant as it trades tokens for more extreme manoeuvres (Blue Ace) and tankiness (Red Ace). I've used this Red Ace setup (or a similar one) a number of times and it has never come particularly close to being destroyed.
Finally, I know I said 3+ ship lists were more fun, but I think this is an interesting enough build to make it worth considering:
Ten Numb (31) - Veteran Instincts (1), Advanced Sensors (3), Mangler Cannon (4), B-Wing/E2 (1), C-3PO (3)
Han Solo (original) (46) - Push the Limit (3), Kanan Jarrus (3), Kyle Katarn (3), Millennium Falcon (evade version) (1)
Total = 99pts
Han works almost as well using either version of him in this list. The Push/Kanan/Kyle combination means that one he gets going he can pick any white or green move on his dial and still end up with a focus token plus 2 other actions (as long as he doesn't bump or land on a rock), which again adds to his manoeuvrability a lot and makes the list more fun to use. Ten Numb would normally be a risky ship to use with him (and still is to a degree), but at least having C-3PO on board will mean he lasts a bit longer. If you wanted to, you could swap the Advanced Sensors for Sensor Jammer as the list has a point spare.

Janky as **** with target locks fountaining all over the board and focus sharing. Your opponent's head will be spinning but so might yours. These PS 6 Rebels' rejects are greater than the some of their parts and pack a mean punch.
