With all the expansions the rebel alliance have a great deal of small ships and soon 3 large, but only one medium.
So if the rebels get's another ship it should be a medium, but what kind of ship would fit?
Or will we get a chimera like pack with new titles and variants for the assault frigate?
There are plenty of options, depending on if you want to include the prequels, Sequels or Legends.
I would say one of the top choices would be the Mk I Assault Frigate. That and the a Dreadnought Cruiser appears to be Armada’s Assault Gunboat.

I could swear the liberty is medium. But i dont have the game so correct me if im wrong

Rebels only get 1 medium. Period. Forever. No other rebel ship may be medium, the AF MK 2 is all the medium ship you'll ever need.
Do you want your next rebel ship medium or well done?
Assault Frigate mk-I I’d love to see. Also the Liberator-class and the CC-9600 frigate. All nice looking medium ships.

Man the CC-9600 looks like a space catfish someone put a chimney on for some reason.
I second Shmitty's blue dice ion platform, the dreadnought or the MC40 are both pretty reasonable chassis for such a thing.

Hull 7 wingless Liberty. It's canon and we don't have a medium MC yet. It could also use the new MC title. Most numerous Mon Cal ship at the Battle of Endor and being a lot narrower than the Liberty it would be a natural for the medium spot by virtue of its overall size.

The Wingless Liberty though is still around 1,200 meters, so that places it in the large camp. I think the MC-40 would be the best Mon Cal medium option out there, with the CC-7700/CC-9600, Liberator-Class and Assault Frigate Mk I also good choices. We could really use some medium ship love.
Most likely to see something from Ep 8. Not sure that any of those were big enough to be mediums though.
The Dreadnought Class.
