I believe in the SWRPG that each skill had specific ways to spend the dice mechanics like the combat chart. Where is it in Genesys?

It's not, probably in an interest to save space.

Yeah, they were either cut to save space or to encourage people to come up with their own interpretations rather than just using what's in the book every time. Hopefully one of the new Genesys podcasts can get Sam Stewart on as a guest and ask him!
