If a ship hits a cluster mine, does that count as an attack and therefore deletes the stealth capability? I know hitting an asteroid doesn't but it didn't mention mines.

Taking damage from mines, bombs or obstacles does not count as an attack and will not strip a Stealth Device.

The only thing which ever deletes stealth device is getting hit by a 'normal' primary weapon or a secondary weapon attack (as in, "I roll red dice, you roll green dice" attack) targeting you.
'Take 1 damage if' effects like feedback arrays, bombs, mines, Darth Vader, being rammed by Captain Oicunn, 'splash damage' from Assault Missiles and Harpoons, all of it is damage but none of it counts as 'an attack'.
Anything that is outside of being the target of an attack will not disable the stealth device. Mines, bombs, hitting obstacles, any kind of indirect damage. Being at range 1 of a ship hit by an Assault Missile or a triggered harpoon missile, an exploding dead man's trigger. All of these can damage without removing the Stealth device. On the other hand, any attack from Lieutenant Blount will remove the stealth device regardless of the damage done.
On a similar note, dropping a mine doesn't count as an attack for the person dropping it either. So if you put Sabine crew and scavenger crane on a Captured TIE you can fly into enemy formations and drop bombs on their face, deal the damage plus Sabine's bonus, recover the bomb with a Scavenger Crane and repeat, all without losing your Captured TIE status.
Also good to note that being "hit" doesn't always entail taking damage:
- Lieutenant Blount will always hit, even if he doesn't do it on dice... very useful for effect-based weapons like Harpoon or Assault Missiles .
- XX-23 S-Thread Tracers may not do any damage, but have an effect when they land.
- Tractor Beam is an attack, even if it only moves a ship around.
