Debris Gambit - can you use 2 evade tokens to defend during one attack?

Nope. I think it's in the FAQ that only one token per turn can be used for its intended purpose. The example they give is using focus tokens.
One evade per defense. So you need to be attacked twice to use a 2nd one.
Only one for its default purpose per defence. If at some point an upgrade allows you to use one for something else (like Sensor Cluster does for focus tokens) then you could use that and the default purpose.
Funny thing, the "best" use would have been Juke, to have an evade on defence and one on attack. But they are elite...
Seriously, Debris Gambit is like it's name, debris junk... You need to be near two obstacles and be attacked by at least two ship to be worth it more then doing evade action... Really bad elite upgrade.
Edit: It should have been free to equip...

It best use, I think, is for granting access to evade tokens to ships without the evade action.
A TIE/sf with advanced optics and fire control system has most of the action economy needed to support the elite upgrade, and evade tokens give you a lot of improved toughness.

It's a buff to swarm leader, with a side use being it gives evades to ships without the action.
It also makes seismic torpedoes more relevant as a counter ![]()

This could get janky, don't know if I'd call it tournament worthy... But you could do some fun with Youngster + Debris Gambit and Quickdraw & Backdraft as a 3 ship list. Lightweight frame plus focus & evade?
