Hello, i would like a clarification on how keep the peace works. So it reads only one used per attack and refers to YOU (each figure).

So say i have 3 guards adjacent to Boba and he gets attacked. Does that mean each one of the 3 can use ΚΤP so the attacker suffers 3 strain?

So no, you cannot use more than one Keep the Peace during an attack. This is similar to how for Royal Guards, you can only add 1 block via Sentinel even if you had a bunch of royal guards.

Note that each ability can be only used once per opportunity. However, each Wing Guard is a different source of Keep the Peace , so that is why the "Limit 1 Keep the Peace ability used per attack." is required. So, the limit is for the number of instances of Keep the Peace, and each one of them is already limited to once per opportunity.
