Quite a few times in TNG (Star Trek talk on FFGSW forums) its shown a Klingon can take a Bat'Leth in 2 hands on 1 of the handle thingies and use it as a single edged blade. But its still a pretty poor weapon even used such.

So this is true. Thank you for bringing it up.
One of the reasons using it in one hand like a sword is the weight of the blade making it harder to stop or adjust mid swing. Also its not balanced as a sword making it more unwieldy.
Not sure this would apply to a lightsaber version. As a lightsaber is more about resistance than weight. And if you removed the curve so the handle was a long pole versus a few hand holds it becomes more like a single edged sword.
We had a HEMA club here in Vienna who tried a replica Bat'Leth in sparring - they found it a real beast to fight against (with swords). It's almost impossible to get behind it and every parry binds the blade so tight, there's no way back for the attacker. At least when wielded by someone with a good grasp of basic things like footwork, timing and distance, the thing is suprisingly good. It's only drawback seems to lie in the attack - it's rather slow and lacks reach.

Can you parry effectively with one hand? Against someone using a sword with two hands?

With a Bat'Leth? Depends on the grip, IMHO. The thing has a lot of options, when it comes to gripping.
But generally speaking, there's no real problem in parrying one-handed vs. two - either you displace the incoming blade (which is the preferred option) or you do a technically correct parry. Only sloppy parries get smashed.

Yeah, with a bat-sword. I can't imagine how you could effectively parry a blow/swing when holding that thing with a single hand.

I would go for the displacement - the thing is rather heavy, so catching the incoming blade mid-swing will smash the attack wide off its mark. But it's a real "two-handed weapon", as it relies a lot on constant grip-changing.

That is of course just a movie, and it would be silly to take it seriously.
So I looked up a documentary about it! It has a speaker voice and everything! It has to be true! They even have real chinese people in it!
It is worth noting that according to the expert "you need a certain level of kung fu skill, before you can master the flying guillotine". I'm assuming that "A certain level of kung fu skill" is a talent in the inevitable "Master of the flying guillotine" warrior spec.
I mean, with all the throwing and jumping it should be ideal for a force user with Move and Enhance.
I guess you could make a lightsaber, or even vibroblade design out of it, but why bother? The flying guillotine is clearly the most most deadly non-nuclear implement ever devised by man. Trying to improve it's lethality by such crude means would be as pointless as making hollow point artillery shells.

I don't know if it's depressing or not, but the MarcyVerse has Cenobite Cubes instead of Holocrons, Eldritch Abominations, actually creepy Force Ghosts, Warp Demons, Mutated Clones, Talking Cacti and the most common cause of death for NPC enemies is 'being squashed by a thrown spaceship'. And 'shouting stormtroopers to death' of course; that never gets old, no matter how often you do it.
... and yet we're incredibly conservative about lightsabers. A grand total of six across thirty-odd PCs, and each and every one of them is a bog-standard single-bladed version. Not one helicopter lightsaber to be seen, in galaxy that's otherwise full of bizarre things (The characters themselves are not conservative, but that's another story.).
Though I'm loving Desslok's Eyebrows Guy with the Flying Guillotine thingy. I'm following his video channel on YouTube now, and I need to see more of that.

Tobin Stryder is many things, and claims to be many things more, yet the only undisputed fact of the outlaw emergent is that he is possibly the best artisan in the galaxy. Each one of his lightsabers have the Tobin Strdyer Trademarked finely tuned emitters on top of whatever modifications he has made. That and he tends to lie a lot about the other things! XD
He has designed several things, but these are his most recent projects. Keep in mind that new lightsaber designs usually comes about when he either loses one, he's only really had two at most at any one time.
A flexible Pike whip; can be worn as a belt when not in combat and has the appearance of an overly heavy band. When unravelled it forms a firm pike that locks together and is roughly 1.2 meters in length, including the blade. Duel phasing actually has him disengage the internal mechanism to turn it into a flexible weapon, which often catches people off guard when initially deployed (hence loss of defence dice). It has a fine tuned emitter and is Superior.
The solution to life's problems: His most recent light saber is a hilt disguised as a handle of an sealed alcholic flask. As the Bounty Hunter persona named the charmellion he pretends to have a major drinking problem, kinda like most drunken fists, yet can snap the handle off for a fine weapon. it has a stun pummel, energy bleed and the usual Stryder flare to make it a deadly weapon with a stun 6 quality at easy access.
Future design: Saber Chuks. Quite simply it is a pike with a lightsaber at one end and a stun pommel at the other. Duel phasing is opening up the blade to reveal deadly numchuks. Loud screaming with these badboys is optional. Gets around the problem of self harming by actually training with the defence (marital artists are good with weapons they regularly train with. Who knew? XD) and by only including one lethal end; though usually dismissing the non-lethal end gets a sharp poke from the shocker.
