I really like small builds as it lets me just have fun and focus on wingman type flying. Im currentlly running Backstabber with stealth device and Black squadron pilot with predator and stealth device. I know these arent super competitive but I was curious if anyone else likes to play 2 on 2 style games. What are your builds if you do?

The guy I usually play with often would rather do a one-ship on one-ship match, sometimes multiple players. It is fun because it really makes you focus on your flying. We also up the stakes by having moving asteroids (we've had the best games with them doing the same 3-bank, then when they come off the board they come back in on a different side with the same maneuver), then if you run into an asteroid or hit one you die. We've done some interesting matchups, even 100 point lists, but inevitably at least one ship on each side will get killed by asteroids. We usually just set a point limit, build a ship or two, then play. It is fun, it really helps get the hang of how each ship flies. I'd say one of the only downsides is that they can get a bit boring when you both are just trying to get arc on the other if/once it gets down to one on one.
Love alternate format games. We do something similar when we have only three show up on game nights. Usually set a point limit, and run as many ships as you can/want. It's been fun, when the limit gets set around 30-35, to drop a pair of Deadman Switched Z's against their kitted-out Aces.
For 100-point two-ship lists, I've loved this lately:
Cassian Andor (Expert Handling, Advanced Sensors, Inspiring Recruit, Kyle Katarn, title, Experimental Interface) 39
Rey (Expertise, Finn, Kanan, HoR-Falcon, Countermeasures) 61
It was developed with Dash (see below), but Rey suits me more. Basically, Cassian dials a green, takes a focus or TL, uses EI to Expert Handling (and barrel roll if possible), then execute the green, clearing 2 stress and giving him two focus tokens. Focus-Focus-TL on a bump-resistant ship, which moves surprisingly well for a U-Wing. Rey is Rey.
For smaller format games, I've loved the duel between Epsilon Ace (Comm Relay, Shield Upgrade) and Blue Ace (R5 Astromech and Integrated Astromech--nothing more elaborate for balance reasons). What's so interesting to me about it is that EA moves last, xe has the hammer until xe's taken a damage card. Then the dynamic flips. Both players have the experience of being high PS, and the advantage that confers.
