So my group of friends and I are not quite sure if the overlord is supposed to display his Minions/Lieutenants Sheets for all to see.
Some of my friends played without seeing them, and some didn't. Are there any firm rules on this kind of thing?

I don't have the rule book with me, so my answer carries little weight, but the idea is the only hidden information is the Overlord's deck, hand, and anything specifically mentioned as hidden from players in the quest book.
Someone will be along with a hard rule from the book shortly.

No, you mostly have it all correct. The OL's hand is generally the only hidden information in the game. Even the composition of the OL's deck is open knowledge prior to being shuffled for play. Obviously during play no one is allowed to look through his deck without using some card or ability.
I think there are only 2 campaigns with any hidden information at all. They both clearly tell you what is hidden. The base game should have no hidden information.
Monster info is not hidden. Just the OL's hand.
