I ran a big tournament and Mario kart was a side game. TONS of fun! Followed the rules linked above, but we played on a 3x3 that was marked off and only did 2 laps. I also didn't use any side cannons. I did 4 player races, and it took about 2 hours to 4 people to lap a 3x3. Dropped to one obstacle a piece, and each corner was a checkpoint. Worked great!
Fun times with mariokart.
We managed to get 4 person races done in...90 min? Don't go more than 4 people or it takes too long.
Having a timer set for the planning phase helps to keep the game moving in a timely manner. Also I think having ships that are further ahead activate first instead of by pilot skill order really helps with the analysis paralysis of trying to figure out which ships are going to be moving before you and possibly blocking your way.

You had a green Y-wing and you didn't make it Luigi?
Only didn't make it Luigi because with the orange jump suits Mario and Luigi would look too similar
