More direct sources would strongly indicate against the 360 degree vision being a myth. Sure, the sarlacc thing would make it seem as if he doesn’t have 360 degree helmet cams, but it got mentioned more than once in “Bloodlines.”
Ah OK. Must have overlooked that in Bloodline (that is the book you are referring to, right? Or do you actually mean one called "Bloodlines"?). The canon page on wookieepedia does not seem to mention it on a quick browse.

Legacy of the Force, meaning non-canon Traviss fan... -tastically dedicated writing, but more importantly, nothing in the game rules (since we are talking the game) mentions anything like 360 degree vision on mandalorian armor, neither does anything I've seen on armor attachments. Which leaves kinda leaves your argument hanging on "Boba should have seen Han Solo coming because he had rear-view mirrors 35 years later in an alternate universe". Yet he obviously didn't. That pushes him from unlucky to incompetent.
Personally, I'd give poor Boba the excuse that he actually had a blind spot to get snuck up on, lest we make the poor mans demise even more ignominous.

I think you should tailor Boba Fett's stats to your players.
He's a character who we mostly know through reputation, rather than concrete examples of his bounty hunting exploits, so you've got a lot of flexibility. Design him to be a very tough challenge for your party; the kinda guy they only have a small chance of beating in a straight fight (and I highly doubt Boba would let a straight fight happen if he can avoid it).
Like, I have stats for him that I made for my games, but I tailor designed them to be a reasonable challenge for MY party. A group with half the XP and worse gear would probably be destroyed by him, which isn't any fun.

Well we could derail this with an ongoing discussion of the "yes it is / no it isn't" variety, but that would likely be old before it even beginns (so essentially, now). So....let's not do that. Official canon however is officially canon, and the former EU is now officially the realm of legends. I get why they did it, I am not completely happy with it, yet it is likely a wise choice. That been said, I am not sad about losing out on uberlorians.
You however, can of course use any part of legends in your vison and your game. That is perfectly fine. For now however it is not canon. Even if it were though, it would not change my statement about how to go about a game and its narrative in respect to the pcs and the npcs (however legendary they may be).
It is by the way not about disney being right or wrong. They do however dictate the narative of the franchise, as they own it. Sad but true.

All I know is that a very similar set of armor was available for sale aboard a Jawa Sandcrawler in that area shortly after he went into the Sarlacc.

I read that one too (or listened to, actually) and it doesn't really imply anything either way. The armor might as well have been spit out as undigestable while the wearer... less so.
Still, it's not like anyone would be surprised if he survived, probably the opposite. Dude's got Wolverine publicity.

While you are being correct about that, it still means they are in control over what is in and what is out. What is canon and what is not is defined by them. You may have different opinions, But as long as disney has the copyright, you are not free to nail your ninety-five theses about star wars onto the doors of disneyland. Once star wars becomes public domain, you are free to start your own canon … well either that, or find a way to become Dave Filoni, that guy seems to get away with building his own canon based on track record to bring back the good stuff from legend into canon. ;-)

But one can be canon and the other can be not canonical ;-)
You might want to look the word up, it's basically about an authority ordering what is part of the accept lore and what is not.
For example the apocrypha are cool stories, but they are not part of the bible canon for most churches. Legends is at best deuterocanonical, a secondary canon which can be doubted or even ignored by primary canon, aka as disney canon in this case.
It really is a simple concept, and it does not make one dime difference for the quality or lack of quality of expanded universe stories.

We're not discussing truth, we're discussing canon.
Sure, we can take the position that nothing is true. After all, as role-players make-beleive is pretty much what we do. But to refer to one cherry picked book as an authoritative source to support your claims, and then disregard other sources that dispute that is pretty **** disingenuous.
If you want to make up whatever you want about Boba Fett, thats fine. Make him an three-eyed pink octopus for all I care. You can not , however, claim that I am wrong while appearing to the authority of an official source, while at the same claiming that canon doesn't matter. If there is no canon, claiming that Boba Fett is a pink octopus is just as valid as claiming that he does or does not have rear-view mirrors in his bucket.
In short, if you want to call people out on being wrong about Boba, you have to respect the canonicity of sources. You can't have it both ways.

This is branching off from a simple derailing of the conversation and getting into trolling. Just because one likes a source better than another source, doesn't suddenly confer validity on one's preferred source.
I loved the EU growing up. I read soo many books. I had all the inconsistencies explained by retcon upon retcon, and it taught me to see how two seemingly divergent viewpoints could both possibly be true in their own way. So I owe that to Legends, expanding me as a person, not just giving me entertainment.
But...canon is canon.
Our games are ours alone, and we can use whatever canon, Legends, or homebrewed information we want. But in a setting talking about a canon character, claiming that there is no delineation between canon sources and non-canon sources is, quite simply, false.
The nemesis bounty hunter in the Edge of the Empire book feels very badass to me, especially his crazy damage output. I'd just give him a rocket pack and a nice pistol, upgrade him to Adversary 3, and be done with it. I don't feel that Boba Fett has to be any more awesome than that. However, if I wanted him to actually face several player characters single-handedly, I'd have to make him tougher than that of course, but I'd rather give him some allies so his power level could be kept reasonable yet badass. As the most martially dangerous PC in my campaign is a close-combat focused lightsaber-wielder, a nemesis with rocket pack is like cryptonite to him.

1. Is the goal to provide a NPC Nemesis that will be a very hard challenge to the PC's, but ultimately they can overcome? Then by all means craft him to be balanced with specific stats, spent XP, talents, weapon upgrades, etc.
2. Is the goal to just provide them with a Threat that they can't ultimately defeat, but is used to threaten, weaken, or delay the PCs? Then just make everything up. Sure give him stats, a fixed dice pool, and soak, but just make them up. He has Plot Soak, Abilities, Wound threshold, and talents. Example:
- Brawn 3 and 2 soak armor, so he has 5 soak? Nah, 7 and 2 defense, because....reasons (Oh does he have the armor master talent and his armor uses a HP for "superior" quality? Sure, whatever, who cares). He has whatever talents you want (even if they fall outside of set trees). He can take as many hits as necessary until the plot deems he leaves or wins, etc. My point here is there is no reason to spend all that time and follow all the rules if its simply for plot, Just don't be too egregious or the players will just accuse you of cheating (he suddenly pulls out a missile tube he didn't have a minute ago! uh I call bull).
