My players inherited a ship named the Gamorian Dancer.
Mine is the Outlaw Sally . I dont know who Sally is tho

Current campaigns include the Dragon’s Wing , the Lightspeed Vagabond , and the Trailblazer . Yet another has a Jedi Interceptor with the callsign “Mojito Leader” of Mojito Squadron.

My ship is the Gallant Gambit .
We originally flew around in Bombaasa's Legacy , named after a Jedi friend one of the PCs (a clone wars veteran) used to have. After both ship and crew had been severly beaten up and we kinda drifted into imperial space tha name was changed to Rampike in case the name of a dead Jedi would draw undue attention. After that, we were almost immediately boarded by a Star Destroyer. Because the universe hates us.
We have a stolen imperial shuttle pod tucked away in the hold called the Neutron Pixie .

We dubbed our SIL5 ship the "Exogorth". It had an retrofitted hangar bay and yeah we called the fighters "Mynock", "I - III" for rather obvious reasons.
Also I guess "Mynock" is a good nam for something small, pesky and maybe underestimated.
Grib's Paradise is what my party started with (Grib being a very disagreeable rodian smuggler who they "inherited" the ship from). They promptly renamed the ship The Shrike but due to a despair on one of their rolls they have a faulty B.o.S.S. tag that reverts to the original name from time to time and causes all sorts of trouble.
I've got one named the Big Black Fish.
There was the Roger Roger , the Gurian, the Nova Hawk, the Flying Fox. One of my 5 groups never got to the point of owning their own ship.

My players a zipping round the galaxy in The Echo Rising... They've also recently obtained a fake BOSS ID of The Restless Nomad, for when they want to avoid any Imperial entanglements!!

I will be using the Nameless Mynock as a NPC ship in honor of this thread, though.
My players wreak havoc across the galaxy in a Nova Courier named Kargon's Folly .
There are/were the Pagong, Bloody Fool, Black Hawk, Twi'lek Dancer, Far Horizon, Longstrider...
Lemme see, nope, no Mynocks; sorry!
We had so far "Drake", with a large duck painted on the sides. ("pun" intended)
And the "Bold Ibis" with a large Bald Ibis painted to the nose. (pun intended)
Can't confirm any Mynock craze.
But maybe that is just because we don't know any good Mynock puns. ;-)

And if you need to go undercover as a touring band, "Exogorth and the Mynocks" would be an excellent name.
