Survival skill deals with handling animals. So taming and riding goes under survival. Pathfinder from the seeker tree gets access to the force talent Animal Empathy, which lets you use force dice to tame animals. Page 89 in the core rulebook for the pathfinder.
I would say the easiest check would be Survival, but I'd allow something like Knowledge: Lore or Education, but at a higher difficulty. I mean, you can google "Training methods on how to handle animals" right now, and get a ton of it. Some will be useful, some won't, but it IS there for someone with good Knowledge: Education
Of course, reading an online article is not the same thing as actually dealing with animals in the wild, hence why Survival would have the lower difficulty, compared to other methods. However, if someone had a really positive roll on that Knowledge Lore/Education on the subject, I'd probably say they could use the good result to make the Survival check easier. First hand experience is great, but pure data is helpful too.
In addition to the other Skills mentioned, I've allowed Coercion to be used to exercise a level of vocal or physical control over an animal. Doesn't "tame" them, but I see it as being a reasonable approach to get creatures to do something they may not want to (like, go away, or let you ride them). They probably won't like the PC at the end of the interaction, but works in a pinch.
Edited by emsquaredThere are rules in the Stay on Target Source book for training a mount. So this might be a bit different than what you're asking but I think it's in the same realm.
It's a hard survival check upgraded a number of times equal to the animal's willpower. It requires four weeks. On a successful check the animal gets the talent Trained Mount 1. With 2 advantages you can decrease the time necessary by 1 week and 2 threats can increase it by 1 week. A triumph gives the mount Trained Mount 2 in stead of just one. A despair gives you a crit. A failed check means the animal is not trainable.
So that's training a mount so you can ride. I don't know if there is anything specifically for taming. I'd follow what the kind people up above said.

Still the same deal I think. I haven't found anything to suggest otherwise. I'll look at Savage Spirits though and see if there's anything in there.

After looking through Savage Spirits it doesn't say anything about taming animals. There's stuff for raising juvenile animals and including companion animals in the party and the like.
I think you're best bet is to use the training a mount rules or work with the GM slightly tweak them according to your situation.
Upon rereading your OP in regards to taming with the force Hermit and Pathfinder deal the most with animals and Pathfinder has the Animal Empathy talent as stated earlier. That's about as far as RAW goes.
