If I have Rey with the unique Rey's saber. Can I overwrite her saber with another of her sabers for more shields?

Unfortunately, no, two copies of a unique can’t ever be on the table.

You could overwrite with a normal lightsaber, tossing out the old Rey's and then overwrite with Rey's on the normal lightsaber.
