This is a great idea, but I think it should be harder.
Win a game without a squadron in your fleet while your opponent has at least 100 points worth of squadrons.
This way you don't nab the bounty when you run into someone running only Tycho or Ciena/Valen.

This may lead to issues because the bounty requires your opponent to fulfill a condition as well, which adds an uncontrollable element. If the bounty was solely dependent on the player, then they can make an attempt knowing full well that they will qualify for the bounty. If it relied on the opponent as well, the player could take a list tailored for the bounty and not even qualify for it.
Bounties should be the composed of two conditions (essentially bring this, then do this):
1. Fleet composition - bring stuff, most likely some anti-meta stuff or things not often used
2. "Win" condition - do something with your stuff
Bounties also will help promote "out of the box" thinking with respect to lists and thus diversify qualifying rounds. Also, it adds incentive for people who have already qualified to keep playing (and thus provide games to those who have not qualified). Bounties should be a "one time only" achievement.
My bounty/achievement suggestions:
"All Ship, All The Time" - Win a game without a squadron in your fleet.
"The Dictor Is In" - Win a game with two Interdictors in your fleet.
"Phantom Menace" - Destroy an equivalent (or more) amount of points of an opponent's squadrons using only Tie Phantoms.
"Big 'Uns" - Win a game with a ship component comprising of only large base ships.

Yea that crossed my mind as well. But since we can change our lists, it's easy to play a 1 off game with no squads and get the bounty against a fleet that has 1 or 2 squads, which is not really an achievement in itself. It was just a suggestion for Biggs to think about.

"The Power of the Dark Side" - Darth Vader must destroy a full health squadron with a single attack and survive the game.

This bounty is not at all difficult - especially given the RCAF + GH list that is tops right now. That's just my opinion. Your other bounties are spot on.

I think the Vader one is easier than Luke since you need Yavaris+Adar to do it, and have to kill the target after the 3rd attack. Vader can just pop a Z-95 or Tie then run away. Some tweaking is necessary but it's a flavorful start.

Monday I have meetings in the city. Wednesday have work bowling social. So any other day I suppose. My preference is always 7pm games.

One thing to keep in mind about these kinds of bounties that require certain fleet-building considerations is that most everybody will be going for the bounty. So unless you want to see all the games from the time the bounty is posted to the time it's claimed be, say, squadronless vs squadronless, a different sort of bounty might be a better idea.
I'd be down to join this if there is still spots for participants. Est for me, Fridays and Saturdays are easiest for me.

I used to be someone who ran all-ship all the time, but then realized that squadrons were an essential part of any list

I was envisioning that all the bounties would be available at the start, thus a lot of choice to pick from.

That would likely be the best option.
Though they may end up being sort of 'bonus rounds', thrown in from time to time to boost the players. How were they done last year?

That was what I pictured, but not sure where I got that from--I could be totally wrong. I don't recall this having been a thing last year, so no precedent. @Roquax 's idea is better though, I think.
I'm sure Biggs has this all figured out though, and will enlighten us all one he gets around to it.
