After listening to the S&V developer interview, we can confirm that the wings will not fold unfortunately.
I have confirmation that it will have folding wings, but it is a single use downgrade.

Confirmed on the latest S&V (at about 53 min) that the wings don't move
I would actually prefer fixed wings. Moveable wings wouldn't add anything but a better way to **** things up (for example when you have a model that looks off cause the wings do not lock in the right position). On the Lambda the Folding wings are actually quite usefull when you have other models near by but on a small ship like the Godess whos name id GUNBOAT, there will be no need of this.
Also opening GUNBOAT threads outside the mighty GUNBOAT thread is heresy and will be punished once SHE had arrived.

Well, the folding wings were primarily to save space in Star Destroyer hangers, as near as I can figure. Maybe the versions in the game are a planetary-based variant that, not being shipborne, don't require folding wings?
(Lambda wings need to fold because they extend down at an angle far below the landing gear. The Gunboat's wings are at a much shallower angle, and shouldn't negatively impact landing even if they don't fold.)
