Maybe that's intentional with the First Order to reflect the group's mindset?

After all, they're really just a scaled down version of the Galactic Empire, lacking the vast resources that Palpatine had his disposal. So in turn, the First Order winds up overcompensating for their smaller size by using bigger and ostensibly "better" versions of what the Empire had. Starkiller Base being a prime example of this, as well as the new walker designs and their new Star Destroyers.

We don't really know the story behind Starkiler Base, namely how long it took to construct; for all we know it took most of that 30 years between RotJ and ANH to get it operational. Of course, prior to the EU becoming a thing nobody really knew the full story of what it took the construct the Death Star, which in and of itself is just as much a gimmicky plot device as Starkiller Base, with fan-wankery concocted to explain why the DS1 had to orbit around Yavin Prime in order to have a clear shot at Yavin IV, instead of just blasting the first planet to rubble and then blasting the second soon after.

It's certainly possible. I'm not really questioning what would be considered "in-universe" logic. I mean, the walkers are a very effective assault force, real military tech doesn't upgrade that often. If it works, why replace it? Is a common rationale. So the fact that they are using it doesn't bother me. I'm simply referring to the style direction by the creators, and how, the second movie, has a shot that is very similar to the original second movie. And how it looks like they are assaulting a Resistance base, and they will have to escape, etc etc. Explaining how the First Order is copying and mimicking the Empire doesn't change that, at least based on what we've been shown so far, it does have some strong similarities to ESB.

Now, as a disclaimer, I really don't care if it's copying elements from ESB. If the story is good, I'm fine with some liberal yoinking here and there. But I can't deny that it does look a lot like ESB. I mean, when I was watching it, that was what was going through in my head. "That looks/feels like that scene from ESB" And that happened multiple times. Again, that's fine with me. Awakens had a lot of echoes of New Hope, and I still enjoyed the he77 out of it.

Yeah, i stop paying attention when fans start trying to shoehorn logic into why something doesn't make sense, unless it's something very significant to the plot of the story. I mean, glaring plotholes are glaring plotholes. But most of the stuff I've seen Star Wars fans lose their poodoo over just makes me roll my eyes most of the time. It's stuff that ends up having no real bearing on the story, doesn't improve it at all. And they seem to forget that these elements are simply tools to tell an engaging story, not the end result of the storyteller.

All of which speaks volumes about the First Order, without having to go into exposition. They are - by and large - relative petulant children who think the Empire’s only real failing is that they just needed bigger toys...that bigger automatically means better.

That or they work for Hollywood, who thinks a sequel only needs "Same threat as last time, BUT BIGGER" to be effective. *cough* Independence Day: Resurgence *cough cough*

Well, they're not "just" bigger. According to the writups that have been released, the ATM6 also has several key improvements over the ATAT, including defenses against the "harpoon and tow cable" trick used at Hoth, as well as armoring the neck joints.
