So, got my first game in with a friend and Had a blast. Plan to get the original core when the reprint releases. However for the moment building a small for fun collection mainly by buying from my flags a few ships at a time. Thinking I will stabilize my empire/rebel options while I wait for the scum 2 pack to release. So I have picked up a defender and a Scurrg. I’m thinking of grabbing the rebel aces to balance out my rebel side for the moment. thoughts?
Building up a casual collection, would appreciate feedback and advice
At this point in the game, you should have a good chance of picking up a used collection that will give you everything you need to get started for a nice price. At least, that's the case in our local area.
I'd try checking out trade groups on Facebook, online forums and eBay for a good value offer.
Other than that, make liberal use of proxying and borrowed ships to get a feel for which ships you find most fun to fly. Online options like Vassal and Tabletop Simulator are also great options for testing out lists before you buy.

Here's the advice I always give to new players getting into the game:
Step 1. Buy a core set (you already did that)
Step 2. Buy another core set, whether the same version or the other version (it sounds like you're already planning on doing that, so good on ya. The core set gives you the most ships for your dollar (MSRP), plus you will definitely want the extra damage deck, dice, maneuver templates, etc.)
Step 3: buy the ships you recognize and love. You will have a lot more fun flying your favorite ships from the movies than you will flying some ship you've never heard of just because the interwebs told you it was gud.
Step 4. Have fun!
alternatively, you can do as @JaceDK suggested and just buy someone's collection used off of eBay. You can save a ton of money that way and instantly have a collection that will keep you entertained for months and years to come.

I was considering buying some used, but there's no one around, and there's not an overly local option. I know @TylerTT was considering selling his collection, wonder if he'd be interested/still has it. Also I've done enough star wars reading and gaming to hear of most of the ships in the game. It's just a matter of finding the right deal.
I would get a Decimator and then Imp Vets if you want good Imperial ships. You get probably the two best ships in the Imperial game, and you already have one Defender. Double Defenders and maybe a Bomber (Tomax Bren) or an SF is very strong.

Print out versions so it's easy to check them on the table (I used to do my own alt-art cards, sorta, with old Ralph McQuarrie concept art and so forth), but otherwise no worries. I know it's possible to just keep a list on a phone, but it's a lot nicer to have something easy to see, both for your own use (it's easy to forget effects) and for your opponent (so they'll have a clearer understanding of your list). Got a Decimator and want to try some sort of Palp/Kylo list? Just do it.
It won't really fly in tournaments, but this is casual.

If you want to get the most bang for your buck, everything containing more than one mini is absolutely worth your money. (As a side note, maybe consider picking up one of the free apps for your phone to minimize card space needed in games and to enable proxing the pilots you don't have for ships you do. With the other players consent of course.)

You'll want to pick things up based on your interest, especially if you plan to be the source of minis for you and your friends.
You have a defender, so I highly recommend the Imperial Veterans box to get another defender and some cool options for them. A decimator is a cool "anti Falcon" as well. Lastly, the Tie FO pack and the Tie striker pack are both really great, self contained sets that come with the cards you are likely to put on the models anyway.
For the rebels side, rebel aces is nice but a better option if you like TFA would be to get Heroes of the Resistance. Both the T70 and the new Falcon are more competitive. If you prefer original trilogy ships, the rebel aces pack is a solid option. Keyan Farlander and Jake Farrell are some really fun pilots!
I'll hold off on scum recommendations unless you really want to do that... But you've taken a first step with the Scurrg.
The beauty of casual xwing is you can fly what you want and when you control the collection, it's easy to keep things from getting out of hand.

Yeah that’s why I’m going casual, to go with my faves with a few icons . For example, I’ll take a YT-2400 over the falcon any day. Although I’m waiting on large base ships till I have 4ish ships a faction. Making a fun little standalone game by buying a ship or two a month as I can is the plan. Grew up with the games and books so I have some unusual faves(hwk290, Scurrg, k-wing, virago... I may own a copy of the shadows of the empire book and game). Most wanted and hired guns both appeal to me. But the other thing I’m using to help hold me back is sticking it to the occasional flgs run so I don’t go too crazy... not that I’m not open to buying used ships, but I get a little tired of dealing with ebay.

I like your thinking, and your plans. YT2400 is a great ship, and I really like the starviper as well.

The YT-2400 is a great stand alone package. Not a tournament winner, but it comes with Lone Wolf+Dash Rendar (pilot)+Heavy Laser Cannon+Outrider+Lando (crew)+Experimental Interface. It is fun and close to competition.

Edited by MaxPowerShoutout for the TIE/fo in there too for the empire. Omega Leader is a lovely self-contained ship in a box, and more than capable of pulling her weight for her cost.
I alwayd suggest getting the Aces/Veterans boxes, as they are good value and give you a huge amount of cards.
So, just made an additional purchase, Amazon had it for 12 bucks off at $28 bucks so I picked up the most Wanted 3 pack to help me with my rounding off before christmas(basically December I'll have play time but no budget, so trying to round off each faction). I'm also pretty pleased because the y-wing is a classic(well so are the Z-95s but not to the general public) but I didn't want them for Rebels.

and the sole X-wing for Rebels.
If I have the funds I think I'll round off the Rebels for the holidays with the Rebel Aces box. Overall gives me some good collections, but I don't go too plastic crazy. Though, I think if I wanted to do a final round off from there: Starviper, YT-2400, Slave-1, HWK-290 and the Star Wing would probably do it for me, giving me some good dual options as well.

After that... if you stay in this game & love it (just like me and tons of other people around here) you'll start buying anything you need, including whole fleets of the same ships... 4 X-Wings, 4 B-Wings and so on.
But you should better stick with one faction, because otherwise things will get too expensive quickly.

I'm stick to singles of my faves(unless it's a trio pack) so I can have for fun groups for each faction.

really a casual grocery list should include the movie ships plus the aces packs. Most wanted is fun as well as the bounty hunter ships. If you are into SotE the Starvipers and the Outrider are musts.
Any TIEs are fun, as are the Z-95s. TIE swarm is great for a casual list.
TFA core plus T-70, /fo (x 2-3)/Sf, Updilon and HotR are a great way to break into the game with only Sequel ships, as well as three copies of IA to use on those T-70s.

Yes, these guys are spot on and more intelligent than I; buy and fly what you enjoy, that's where the "game" is at. Netlisting is fine if and when you get into tourneys and want to fly the meta either to tweak/be it, or just to know how it works.
My personal advice on what to add to your collection?
1 TIE Interceptor Expansion Pack
1 Imperial Aces Expansion Pack
....yeah, you'll need Autothrusters eventually, but for fun, you can skip purchasing Starvipers (but they're fun too!) or wait till Kylo's new ride comes out.
